Chef Renzo Macchiavello received his culinary degree from the Culinary Institute of Los Angeles, and then moved on to work as a Chef in Miami, Las Vegas and now Southern California.

  1 Whole chicken

  2 T. Chopped garlic

  1 Cup Dark Beer

  1/4 Cup Vegetable oil

  4 T. Soy sauce

  1/2 t. Cumin

  1 t. Black pepper

  1 t. salt


  Mix all ingredients.

  Marinate chicken for 12 hours in refrigerator.

  BBQ, bake or rotisserie until done.

  Serve with salad of your choice and french fries.
